Ingredients
  

For the Quinoa Base
  • 1 cup quinoa Rinse before cooking.
For the Apples
  • 2 medium apples Core and chop into bite-sized pieces.
For the Cinnamon
  • 1 teaspoon cinnamon Ceylon cinnamon recommended.
For the Creaminess
  • 1 cup yogurt Choose dairy or plant-based.
For the Crunch
  • 1 handful nuts (optional) Any preferred nuts or seeds.
For Cooking
  • 1 tablespoon coconut oil For sautéing the apples.

Method
 

Cook Quinoa
  1. Rinse 1 cup of quinoa under cold water. Combine with 2 cups of water and a pinch of salt in a medium saucepan. Bring to boil, cover, and simmer on low for 15 minutes until water is absorbed.
Sauté Apples
  1. Melt 1 tablespoon of coconut oil in a non-stick skillet over medium heat. Add 2 chopped apples and sauté for 5-7 minutes until caramelized. Add a dash of cinnamon during the last minute.
Layer Parfait
  1. In serving glasses, layer cooked quinoa, sautéed apples, and yogurt. Repeat until filled.
Top it Off
  1. Add a handful of nuts on top of each parfait. Serve immediately or chill briefly.
