Cook Quinoa
- Rinse 1 cup of quinoa under cold water. Combine with 2 cups of water and a pinch of salt in a medium saucepan. Bring to boil, cover, and simmer on low for 15 minutes until water is absorbed.
Sauté Apples
- Melt 1 tablespoon of coconut oil in a non-stick skillet over medium heat. Add 2 chopped apples and sauté for 5-7 minutes until caramelized. Add a dash of cinnamon during the last minute.
Layer Parfait
- In serving glasses, layer cooked quinoa, sautéed apples, and yogurt. Repeat until filled.
Top it Off
- Add a handful of nuts on top of each parfait. Serve immediately or chill briefly.
