Apple Filling
  • 1 tbsp Cornstarch ensure proper mixing
  • 1 cup Pecans substitute with walnuts, if desired
  • 1/4 cup Maple Syrup can use honey as alternative

Method
 

Preparation Steps
  1. In a medium saucepan, combine chopped apples, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Cook over medium heat for 5-10 minutes until softened.
  2. Cut French bread into ½ inch cubes and place in a large mixing bowl.
  3. In a separate bowl, whisk together eggs, milk, cream, brown sugar, vanilla extract, cinnamon, and nutmeg. Pour over cubed bread, gently folding to coat.
  4. Preheat oven to 350°F. Grease muffin tin, spoon the soaked bread mixture into muffin cups, and add apple filling.
  5. In a small bowl, melt butter and mix with maple syrup and chopped pecans. Spoon the topping over each cup.
  6. Bake for 12-15 minutes until golden brown and a toothpick comes out clean.
  7. Let cool for a few minutes before serving warm, drizzled with maple syrup.
