  • 8 oz Bow Tie Pasta You can substitute any pasta shape you like.
For the Salad
  • 1 cup Frozen Corn Fresh corn is a great seasonal substitute.
  • 1 cup Frozen Peas Feel free to use fresh peas when available.
  • 8 slices Bacon You can swap it for turkey bacon or omit for a vegetarian option.
For the Dressing
  • 2 cloves Garlic Use fresh garlic for the best flavor.
  • 3 tbsp Lemon Juice Lime juice is a fantastic alternative if preferred.
  • 1/4 cup Extra Virgin Olive Oil A neutral oil like canola can be used.
  • 1/2 tsp Salt Adjust to taste.
  • 1/4 tsp Black Pepper Adjust to taste.

Method
 

Cooking
  1. Bring a large pot of salted water to a boil, then add the bow tie pasta. Cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop cooking.
  2. In a separate large bowl, combine minced garlic, lemon juice, olive oil, salt, and pepper. Whisk for 1-2 minutes until well-blended.
  3. Once the pasta has cooled, add it to the bowl with the dressing. Gently fold in the peas, corn, and crumbled bacon.
  4. Toss all ingredients together until evenly coated with dressing.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving.
