Preparation Steps
- In a small mixing bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth. Set the sauce aside.
- Heat oil in a large skillet over medium-high heat. Add diced chicken breast, season with salt and pepper, and sauté for 5-6 minutes. Remove once cooked.
- In the same skillet, scramble the lightly beaten eggs for 2-3 minutes. Remove and set aside with the chicken.
- Add diced carrots and minced garlic to the skillet. Sauté for 2-3 minutes.
- Add frozen green peas and then the chilled rice, stir-fry for approximately 3-4 minutes until the rice is crispy.
- Return chicken and eggs to the skillet. Add soy sauce and mix until well combined.
- Drizzle Bang Bang sauce over the mixture and stir well. Cook for an additional minute or two.
- Garnish with sliced green onions and serve immediately.
