Ingredients
  

For the Base
  • 2 cups Cooked Rice Day-old, chilled rice preferred
  • 1 pound Chicken Breast Diced
  • 2 large Eggs Lightly beaten
For the Veggies
  • 1 cup Carrots Diced
  • 1 cup Green Peas Frozen peas work fine
  • 3 cloves Garlic Minced
  • 2 stalks Green Onions Sliced
For the Sauce
  • 3 tablespoons Soy Sauce Or tamari for gluten-free
  • 1 cup Bang Bang Sauce Mix of mayonnaise, Sriracha, sweet chili sauce, and rice vinegar
For Frying
  • 2 tablespoons Oil Neutral oil preferred

Method
 

Preparation Steps
  1. In a small mixing bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth. Set the sauce aside.
  2. Heat oil in a large skillet over medium-high heat. Add diced chicken breast, season with salt and pepper, and sauté for 5-6 minutes. Remove once cooked.
  3. In the same skillet, scramble the lightly beaten eggs for 2-3 minutes. Remove and set aside with the chicken.
  4. Add diced carrots and minced garlic to the skillet. Sauté for 2-3 minutes.
  5. Add frozen green peas and then the chilled rice, stir-fry for approximately 3-4 minutes until the rice is crispy.
  6. Return chicken and eggs to the skillet. Add soy sauce and mix until well combined.
  7. Drizzle Bang Bang sauce over the mixture and stir well. Cook for an additional minute or two.
  8. Garnish with sliced green onions and serve immediately.
