Garnishes (Optional)
  • 2 tbsp Chives Fresh flavor and color for presentation.
  • 1/4 cup Crispy Onions Adds crunch and an extra flavor boost.

Equipment

  • Muffin tin

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and generously grease a muffin tin.
  2. Line each muffin cup with a slice of bacon, ensuring it covers the sides entirely.
  3. Combine ground beef, breadcrumbs, egg, finely chopped onion, Worcestershire sauce, BBQ sauce, salt, and pepper in a large bowl. Mix gently until just combined.
  4. Press the meatloaf mixture into each bacon-wrapped muffin cup, filling them about three-quarters full.
  5. Bake the muffin tin in the preheated oven for 20-25 minutes, until the meatloaf is cooked through and registers 160°F (70°C) internally.
  6. Brush the tops of each meatloaf cupcake with additional BBQ sauce and return to the oven for an additional 5 minutes.
  7. Prepare the mashed potatoes by mixing warm mashed potatoes with butter and milk or cream until smooth.
  8. Once the cupcakes have cooled slightly, pipe or spoon the mashed potatoes on top and garnish with chives or crispy onions.
