- In a large mixing bowl, combine chicken breast pieces with olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, sea salt, and freshly cracked black pepper. Ensure all chicken pieces are well-coated in the marinade. Allow this mixture to marinate for at least 10 minutes.
- Heat a frying pan over medium-high heat and add the marinated chicken. Cook for approximately 6 minutes, flipping occasionally, until the chicken is browned and cooked through. Remove the chicken from the pan and let it rest briefly before slicing into bite-sized pieces.
- Preheat your oven to 200°C (400°F). While the oven warms up, line a baking tray with parchment paper. Spread a generous layer of BBQ sauce over each flatbread.
- Distribute the cooked chicken evenly across the flatbreads. Sprinkle shredded mozzarella on top, followed by slices of red onion and capsicum. Add any additional toppings you desire.
- Place the assembled flatbreads in the preheated oven and bake for 8 to 10 minutes until the cheese melts and the flatbreads turn crispy and golden-brown.
