  • 4 cups baby spinach or arugula
  • 1 cup mandarin oranges or fresh orange sections
  • 1 cup raspberries or strawberries
  • 1 cup blackberries or blueberries
  • 1/2 cup feta cheese or goat cheese
  • 1/2 cup walnuts or pecans
For the Vinaigrette
  • 1/4 cup extra virgin olive oil or avocado oil
  • 2 tablespoons balsamic vinegar or red wine vinegar
  • 2 tablespoons fresh orange juice or lemon juice
  • 1 tablespoon honey or agave/maple syrup

Method
 

Vinaigrette Preparation
  1. In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of balsamic vinegar, 2 tablespoons of fresh orange juice, and 1 tablespoon of honey until smooth.
  2. Taste the vinaigrette and adjust sweetness or acidity as desired.
Salad Assembly
  1. In a large mixing bowl, layer 4 cups of fresh baby spinach.
  2. Add 1 cup of mandarin orange segments, 1 cup of raspberries, and 1 cup of blackberries.
  3. Crumble in 1/2 cup of feta cheese and finish with 1/2 cup of roughly chopped walnuts.
Tossing and Serving
  1. Drizzle your prepared vinaigrette over the salad and gently toss the ingredients together.
