Step-by-Step Instructions
  1. Toss 2 cups of cooked, shredded chicken breast with 1/2 cup of barbecue sauce until thoroughly coated. Set this mixture aside.
  2. Lay out two large flour tortillas and evenly sprinkle half of the cheddar and mozzarella cheese over each tortilla.
  3. Top the cheese with the BBQ chicken mixture, followed by sliced red onions and chopped cilantro.
  4. Place the remaining tortillas on top to form a closed quesadilla and press down gently.
  5. In a large skillet, heat 1 tablespoon of olive oil over medium heat until shimmering.
  6. Cook the quesadillas for 3-4 minutes until the bottom is golden brown, then flip and cook the other side for another 3-4 minutes.
