- Toss 2 cups of cooked, shredded chicken breast with 1/2 cup of barbecue sauce until thoroughly coated. Set this mixture aside.
- Lay out two large flour tortillas and evenly sprinkle half of the cheddar and mozzarella cheese over each tortilla.
- Top the cheese with the BBQ chicken mixture, followed by sliced red onions and chopped cilantro.
- Place the remaining tortillas on top to form a closed quesadilla and press down gently.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat until shimmering.
- Cook the quesadillas for 3-4 minutes until the bottom is golden brown, then flip and cook the other side for another 3-4 minutes.
