  • 2 cups Blackberries Star ingredient.
  • 1 cup Water Essential for cooking.
  • 2 tablespoons Lemon Juice Can substitute with lime juice.
  • 1/2 cup Sugar Can use brown sugar.
  • 4 oz Goat Cheese Can substitute with cream cheese or brie.
  • 1 tablespoon Lemon Zest Fresh is best.
  • 1 tablespoon Raw Sugar Can swap with granulated sugar.
  • 1 tablespoon Fresh Thyme Can use basil as alternative.
  • 1 each Egg For egg wash.

Method
 

Instructions
  1. In a medium saucepan, combine fresh blackberries, a splash of water, lemon juice, and sugar. Bring to a boil, then reduce to a simmer for 20-30 minutes.
  2. Thaw the puff pastry sheets at room temperature for 30-40 minutes, then roll them into rectangles on a floured surface.
  3. Crumble goat cheese over the pastry, layer with blackberry jam, cut into strips, fold and twist each strip.
  4. Mix lemon zest, raw sugar, and thyme as a topping. Brush pastry lightly with egg wash before adding the topping.
  5. Preheat oven to 400°F (200°C). Bake twists for 16-18 minutes until golden brown. Cool for 15-20 minutes before serving.
