For the Yogurt Base

For the Texture
  • 1 cup Granola Can also use nuts or seeds.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan over medium heat, add 1 cup of blueberries and 1 tablespoon of lemon juice. Stir occasionally for 4-5 minutes until the blueberries burst, forming a thick compote. Remove from heat and let cool slightly.
  2. In a mixing bowl, whisk together 2 cups of Greek yogurt, 2 tablespoons of honey, and 1 teaspoon of vanilla extract until smooth and creamy.
  3. Line a mini muffin tin with silicone molds. Spoon about 1 tablespoon of the yogurt mixture into each cavity, then add a dollop of blueberry compote on top and swirl with a toothpick.
  4. Sprinkle granola or nuts on top of each yogurt bite for added texture.
  5. Transfer the muffin tin to the freezer and let the bites freeze for at least 2 hours, or until firm.
  6. Once set, gently pop the bites out of the molds and enjoy immediately or store in the freezer.
