Method
 

Preparation
  1. In a large mixing bowl, crack open 2 eggs and whisk until fluffy. Add 2 cups of milk, 6 tablespoons of vegetable oil, and 1 teaspoon of vanilla extract. Stir gently until the mixture is well combined and smooth, taking care not to overmix.
  2. In another bowl, sift together 2.5 cups of all-purpose flour, 2 tablespoons of granulated sugar, 2 teaspoons of baking powder, and 1.5 teaspoons of salt. Mix until evenly blended.
  3. Gently pour the wet ingredients into the dry mixture. Stir the batter until just combined to keep it lumpy.
  4. Preheat a non-stick skillet or griddle on medium heat for about 5 minutes.
  5. Pour batter onto the skillet to form one large round pancake for the bunny’s body and two smaller oval pancakes for the feet. Cook for approximately 2-3 minutes, then flip and cook for an additional 1-2 minutes.
  6. Stack the large pancake at the bottom and layer the smaller pancakes on top to form the feet. Use sliced strawberries for the feet and add whipped cream on top for the fluffy tail. Place a few raisins around for footprints.
