- Preheat your oven to 350°F (175°C) and prepare baking sheets lined with parchment paper.
- In a large mixing bowl, beat together cold unsalted butter, brown sugar, and granulated sugar until creamy.
- Add a large egg and vanilla extract, mixing on low speed until just combined.
- Sift in all-purpose flour, baking soda, and salt, mixing on low speed until the dry ingredients are incorporated.
- Fold in the butterscotch chips and semisweet chocolate chips using a spatula.
- Drop heaping amounts of dough onto prepared baking sheets, spacing them 2-3 inches apart.
- Optionally, place extra butterscotch and chocolate chips on top of each cookie mound before baking.
- Bake in the preheated oven for 8-10 minutes for medium cookies, or 10-13 minutes for larger ones.
