Method
 

Step-by-Step Instructions
  1. Preheat your oven to 500°F (260°C) and prepare your baking sheet with parchment paper.
  2. Cut croissants in half and toast cut side up for 5-10 minutes until golden and crispy.
  3. In a skillet, heat olive oil and sauté scallions and sausage for about 5 minutes, then fold in sage.
  4. Combine toasted croissant pieces with sausage mixture in a large bowl.
  5. In a separate bowl, whisk eggs, milk, cream, cheese, salt, and pepper until smooth.
  6. Grease the baking dish, layer croissant mixture, pour custard, and press down slightly.
  7. Cover and refrigerate for at least 4 hours or overnight.
  8. Preheat oven to 350°F (175°C), add additional cheese, and bake for about 45 minutes.
  9. After cooling for 10 minutes, garnish with fresh herbs and serve warm.
