- Preheat your oven to 350°F (180°C) and line your baking sheets with silicone baking mats.
- Cream together 1 cup of unsalted butter with 3/4 cup of granulated sugar on medium speed for about 3-4 minutes until fluffy.
- Add 1 large egg, 1 tsp of vanilla extract, and 1 tsp of almond extract to the creamed mixture. Beat until fully incorporated.
- Gradually add 2 1/4 cups of all-purpose flour and 1/2 tsp of salt, mixing on low speed just until combined.
- If desired, divide the dough and add red and green gel icing color to create festive hues.
- Fill your cookie press with the dough and press onto the lined baking sheets.
- Sprinkle with colored sugar or sprinkles if desired.
- Bake for 5-8 minutes until edges are lightly golden.
- Let cool on sheets for 4-5 minutes before transferring to a wire rack to cool completely.
