- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add chopped onion and diced bell pepper, sautéing for 5-7 minutes until tender and translucent. Stir in minced garlic and cook for an additional minute.
- Incorporate 1 pound of boneless, skinless chicken breasts into the pot, seasoning with 2 tablespoons of Cajun seasoning, 1 teaspoon of cumin, 1 teaspoon of smoked paprika, and optional cayenne pepper. Stir well and cook for 5-7 minutes until the chicken is no longer pink.
