Step-by-Step Instructions
  1. Measure 6 cups of Rice Chex cereal and place it in a large mixing bowl. Line a baking sheet with parchment paper.
  2. Add approximately 1 cup of apple chips to a ziplock bag and crush them gently using a rolling pin, keeping some larger pieces.
  3. In a microwave-safe bowl, combine 1.5 cups of white chocolate chips, 1 cup of caramel bits, and 2 tablespoons of butter. Heat in the microwave at 30-second intervals until smooth.
  4. Once melted, stir in 1 teaspoon of vanilla extract and a pinch of salt to enhance the flavor.
  5. Pour the warm caramel mixture over the Rice Chex cereal, gently tossing to coat evenly while remaining crisp.
  6. In a clean ziplock bag, combine 1 cup of powdered sugar, 0.25 cup of granulated sugar, and 2 teaspoons of apple pie spice. Add the coated cereal, seal, and shake until coated.
  7. Spread the mixture onto the prepared baking sheet and sprinkle with crushed apple chips. Allow to cool for 10-15 minutes until hardened.
