- Measure 6 cups of Rice Chex cereal and place it in a large mixing bowl. Line a baking sheet with parchment paper.
- Add approximately 1 cup of apple chips to a ziplock bag and crush them gently using a rolling pin, keeping some larger pieces.
- In a microwave-safe bowl, combine 1.5 cups of white chocolate chips, 1 cup of caramel bits, and 2 tablespoons of butter. Heat in the microwave at 30-second intervals until smooth.
- Once melted, stir in 1 teaspoon of vanilla extract and a pinch of salt to enhance the flavor.
- Pour the warm caramel mixture over the Rice Chex cereal, gently tossing to coat evenly while remaining crisp.
- In a clean ziplock bag, combine 1 cup of powdered sugar, 0.25 cup of granulated sugar, and 2 teaspoons of apple pie spice. Add the coated cereal, seal, and shake until coated.
- Spread the mixture onto the prepared baking sheet and sprinkle with crushed apple chips. Allow to cool for 10-15 minutes until hardened.
