Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Cut butternut squash into cubes, toss with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until golden-brown.
  3. In a skillet, heat olive oil over medium heat, add onions and a pinch of salt, and cook for about 20 minutes until caramelized.
  4. Roll out the puff pastry and place it in the tart pan, pricking the bottom with a fork.
  5. Spread caramelized onions over the pastry, add roasted squash, crumble cheese on top, drizzle with heavy cream and sprinkle thyme.
  6. Bake the tart for 25-30 minutes until golden brown and crispy.
  7. Let it cool for about 10 minutes, then slice and serve.
