  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 each red bell pepper chopped
  • 1 each yellow bell pepper chopped
  • 2 cups cauliflower florets
  • 2 cups chopped carrots
  • 1 cup green beans trimmed
  • 1 can coconut milk 14 oz
  • 1 cup vegetable broth
Seasoning
  • 2 tablespoons curry powder Adjust to taste
  • 1 teaspoon allspice Can swap with nutmeg
  • 1 teaspoon smoked paprika Regular paprika makes a substitute
  • salt and black pepper Adjust to taste
Finish
  • fresh cilantro For garnish
  • lime wedges For serving

Method
 

Cooking Instructions
  1. Melt coconut oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger, and sauté for 3-4 minutes until translucent.
  3. Stir in red and yellow bell peppers; cook for 2-3 minutes.
  4. Mix in carrots and cauliflower florets; cook for another 3-4 minutes.
  5. Sprinkle in curry powder, allspice, and smoked paprika; stir to combine.
  6. Pour in coconut milk and vegetable broth; stir and bring to a simmer.
  7. Cover and simmer for 15-20 minutes until vegetables are tender.
  8. Add green beans in the last 5 minutes of cooking.
  9. Adjust seasoning with salt and pepper; garnish with cilantro.
  10. Serve with lime wedges.
