Preparation Steps

- Cut cauliflower into florets, drizzle with olive oil, and season with salt, pepper, garlic powder, and rosemary. Roast for 10 minutes.
- Melt butter in a saucepan and whisk in flour to create a roux for 1-2 minutes.
- Slowly add cream or milk to the roux, whisk to thicken for 3-5 minutes.
- Stir in mozzarella and cheddar until melted; add mustard if desired.
- Combine roasted cauliflower with cheese sauce; bake at 350°F (175°C) for 20 minutes.
