For the Cauliflower
  • 1 large head Cauliflower Cut into florets
  • 2 tablespoons Olive Oil For roasting
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Garlic Powder Or fresh minced garlic
  • 1 teaspoon Dried Rosemary Fresh rosemary can be used
For the Cheese Sauce
  • 2 tablespoons Butter For the roux
  • 2 tablespoons Flour All-purpose, or gluten-free
  • 1 cup Cream or Milk Non-dairy milk for vegan
  • 1 cup Shredded Mozzarella Or provolone
  • 1 cup Shredded Cheddar Any cheese blend
  • 1 teaspoon Mustard Optional
For the Garnish
  • 2 tablespoons Chives Chopped, or green onions

Method
 

Preparation Steps
  1. Preheat the oven to 425°F (220°C).
  2. Cut cauliflower into florets, drizzle with olive oil, and season with salt, pepper, garlic powder, and rosemary. Roast for 10 minutes.
  3. Melt butter in a saucepan and whisk in flour to create a roux for 1-2 minutes.
  4. Slowly add cream or milk to the roux, whisk to thicken for 3-5 minutes.
  5. Stir in mozzarella and cheddar until melted; add mustard if desired.
  6. Combine roasted cauliflower with cheese sauce; bake at 350°F (175°C) for 20 minutes.
  7. Broil for 2-3 minutes until the top is golden.
  8. Garnish with chives and serve hot.
