  • 2 cups cooked chicken shredded, rotisserie preferred
  • 1 cup shredded cheddar cheese
  • ½ cup grated parmesan cheese
  • 2 cups chicken broth
  • 1 cup milk
  • 1 onion, diced
  • 2 cloves garlic, minced

Step-by-Step Instructions
  1. Melt butter in a large saucepan over medium heat. Add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
  2. Stir in rice and toast for 1-2 minutes until well coated.
  3. Add chicken broth, bring to boil, then cover and simmer for 12-15 minutes for white rice or 45-50 for brown rice.
  4. Add broccoli florets, cover, and cook for 5 minutes until tender.
  5. Stir in chicken, milk, cheddar, and parmesan. Mix until cheese is melted and creamy, about 3-5 minutes.
  6. Season with salt, pepper, and cayenne. Heat through for 2-3 minutes.
  7. Serve hot, garnished with extra cheese or herbs if desired.
