Step-by-Step Instructions
  1. In a large bowl, combine the sliced chicken breasts with garlic powder, chili powder, salt, and black pepper. Mix thoroughly to ensure chicken is coated evenly with spices. Set aside.
  2. Place a large skillet over medium-high heat and add avocado oil. Heat for 1-2 minutes until shimmering.
  3. Add the seasoned chicken mixture to the hot skillet, cooking for approximately 7-10 minutes until golden brown and no longer pink.
  4. Once the chicken is cooked, add the sliced green bell peppers, onions, and minced garlic. Sauté for another 3-4 minutes.
  5. Pour in the fire-roasted diced tomatoes and stir well. Cover the skillet and let it simmer for about 5 minutes.
  6. Remove the lid, stir the mixture, and adjust seasoning if needed. Sprinkle Parmesan cheese on top and serve.
