- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with aluminum foil, lightly spraying it with cooking spray.
- Melt ½ cup of unsalted butter in a microwave-safe bowl for 30 to 40 seconds. Stir in 1 cup of light brown sugar until glossy.
- Add 1 large egg and 1 teaspoon of vanilla extract to the mixture, stirring until blended.
- Gradually sift in 1 cup of all-purpose flour and optionally, ¼ teaspoon of salt. Fold until just combined.
- Fold in 1 cup of semi-sweet chocolate chips and your pitted cherries.
- Pour the batter into the prepared pan, smoothing the top evenly.
- Bake for 27 to 32 minutes until edges pull away and the center is set.
- Let cool in the pan for at least 1 hour before lifting out using the foil overhang and slicing.
