  • 1 medium Avocado Adds creaminess and healthy fats.

Salad Ingredients
  • 375 g Short Pasta Like rotini, fusilli, or penne.
  • 1 can Chickpeas (19 oz.) Drained.
  • 1 can Corn (12 oz.) Drained and rinsed.
  • 1 medium Cucumber Chopped.
  • 1 small Red Onion Finely diced.
  • 1/2 cup Feta Cheese Or Cojita cheese.
  • Cilantro Optional, for garnish.

Method
 

Preparation
  1. Prepare the dressing by blending Greek yogurt, avocado, lime juice, and seasonings until smooth. Set aside.
  2. Cook short pasta in boiling salted water according to package instructions, usually around 8-10 minutes. Drain and rinse under cold water.
  3. In a large bowl, combine cooled pasta, chickpeas, corn, cucumber, and red onion. Stir gently.
  4. Drizzle the dressing over the salad and toss to coat evenly.
  5. Sprinkle feta cheese over the salad and gently mix again.
  6. Garnish with cilantro and serve immediately or let chill for 30 minutes.
