Ingredients
  

For the Steak
  • 1 pound flank steak or skirt steak Flavorful cuts ideal for marinating.
  • 1/2 cup fresh cilantro Use leaves and stems.
  • 1/4 cup fresh lime juice Fresh squeezed for optimal flavor.
  • 3 cloves garlic Minced.
  • 2 tablespoons olive oil For marinade.
  • 1 teaspoon cumin For earthy notes.
For the Rice Base
  • 1 cup rice (white, jasmine, brown, or quinoa) Cooking in broth adds flavor.
For Toppings
  • 1 avocado sliced Adds creaminess.
  • 1 cup black beans Canned or cooked.
  • 1 cup corn Canned or cooked.
  • 4 radishes sliced For crunch.
  • 2 cups lettuce Shredded.

Method
 

Marinade and Rice Preparation
  1. In a blender, combine fresh cilantro, lime juice, minced garlic, olive oil, cumin, salt, and pepper. Blend until smooth. Place steak in a resealable bag, pour marinade over it, seal and refrigerate for at least 30 minutes.
  2. Rinse rice under cold water until it runs clear. Combine with broth in a pot and cook according to package instructions, usually about 15-20 minutes. Stir in chopped cilantro and a squeeze of lime juice after cooking.
Cooking the Steak
  1. Remove steak from the fridge to reach room temperature (15-20 minutes). Heat a skillet or grill over medium-high heat with a splash of olive oil. Sear steak for 3-5 minutes each side until it reaches 130°F for medium-rare. Rest for 10 minutes before slicing.
Assembly
  1. Slice the rested steak against the grain. Create a base with cilantro-infused rice, layer sliced steak on top, and add desired toppings: avocado, black beans, corn, radishes, and lettuce.

Notes

For low-carb, substitute rice with cauliflower rice. Marinate steak longer for deeper flavor. Keep toppings separate when storing.
