Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it and dusting with flour.
  2. Place sweet potatoes in a bowl with water, cover, and microwave for 5-8 minutes until fork-tender. Mash until smooth.
  3. In a medium bowl, whisk eggs, oil, buttermilk, and vanilla extract until smooth.
  4. In a large bowl, sift together flour, sugars, baking soda, cinnamon, ginger, nutmeg, allspice, cloves, and salt.
  5. Gently fold the wet mixture into the dry ingredients until just combined.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 60-70 minutes, checking for doneness with a toothpick.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
