- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a separate bowl, beat butter, granulated sugar, and brown sugar together until light and fluffy.
- Add egg and vanilla extract to the butter mixture and beat until smooth.
- Gradually fold the dry mixture into the wet mixture until just combined.
- In a small bowl, mix brown sugar and ground cinnamon for the filling.
- Roll out half of the cookie dough, sprinkle with half of the filling, and roll tightly.
- Slice the rolled dough into 1-inch thick rounds and place them on prepared baking sheets.
- Bake for 10-12 minutes, or until edges are golden brown.
