Preparation
- Cream together butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg yolk and vanilla extract until well incorporated.
- Whisk together flour and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Chill the dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Shape tablespoon-sized portions into balls and place on prepared baking sheets.
- Press an indentation into the center of each cookie ball.
- Fill indentations with fruit preserves or chocolate ganache.
- Bake for 12-15 minutes or until edges just begin to turn golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
