- In a large mixing bowl, whisk together the lite coconut milk, sparkling water, blue raspberry martini mix, and coconut extract until smooth.
- Carefully pour the mixture into popsicle molds, filling each about three-quarters full.
- Gently press a few frozen raspberries into each mold.
- Place the filled molds in the freezer and freeze for at least 8 hours.
- Run the molds under cold water for 10-15 seconds to loosen the popsicles.
- Lightly wet the tops of each popsicle and dip in blue sprinkles and coconut flakes for garnish.
