Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the lite coconut milk, sparkling water, blue raspberry martini mix, and coconut extract until smooth.
  2. Carefully pour the mixture into popsicle molds, filling each about three-quarters full.
  3. Gently press a few frozen raspberries into each mold.
  4. Place the filled molds in the freezer and freeze for at least 8 hours.
  5. Run the molds under cold water for 10-15 seconds to loosen the popsicles.
  6. Lightly wet the tops of each popsicle and dip in blue sprinkles and coconut flakes for garnish.
