  1. Rinse and pat dry the chicken thighs. Season with salt, pepper, and Italian seasoning.
  2. Heat a tablespoon of olive oil in a large pot over medium heat. Add onion and garlic, sauté for 3-4 minutes until fragrant.
  3. Add seasoned chicken thighs to the pot, browning for 5-7 minutes per side until golden.
