Method
 

Cooking Instructions
  1. In a medium bowl, mix together one can of drained tuna and one cup of cottage cheese using a fork.
  2. Crack one egg into the mixture and add finely diced green onions, a sprinkle of garlic powder, and optional parsley. Season with salt and black pepper. Stir until fully combined.
  3. Add half a cup of panko breadcrumbs to the mixture, mixing well until you achieve a consistency that holds together when pressed.
  4. Divide the mixture into six portions and shape each into a patty about 2½ inches wide.
  5. In a skillet, heat two tablespoons of olive oil over medium heat until shimmering.
  6. Carefully place the patties in the skillet and cook for about 3–4 minutes on each side until they turn golden brown.
  7. Remove the patties from the skillet and place them on a paper towel to absorb any excess oil. Serve warm with lemon and sauce of your choice.

Notes
