- In a medium bowl, mix together one can of drained tuna and one cup of cottage cheese using a fork.
- Crack one egg into the mixture and add finely diced green onions, a sprinkle of garlic powder, and optional parsley. Season with salt and black pepper. Stir until fully combined.
- Add half a cup of panko breadcrumbs to the mixture, mixing well until you achieve a consistency that holds together when pressed.
- Divide the mixture into six portions and shape each into a patty about 2½ inches wide.
- In a skillet, heat two tablespoons of olive oil over medium heat until shimmering.
- Carefully place the patties in the skillet and cook for about 3–4 minutes on each side until they turn golden brown.
- Remove the patties from the skillet and place them on a paper towel to absorb any excess oil. Serve warm with lemon and sauce of your choice.
