  • 2 tablespoons Maple Syrup Agave syrup is a suitable alternative.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds. Brush with olive oil and sprinkle with salt and pepper.
  3. Place the squash halves cut side down on a baking sheet. Roast for 25-30 minutes until fork-tender and caramelized.
  4. Melt butter in a skillet over medium heat. Add diced apples, walnuts, and cranberries, stirring until apples soften, about 5 minutes.
  5. Add cinnamon, nutmeg, brown sugar, and a pinch of salt to the sautéed mixture and cook for another 2-3 minutes.
  6. Turn the roasted squash cut side up and fill each half with the warm apple mixture.
  7. Drizzle maple syrup over each squash half and return to the oven for another 15-20 minutes.
  8. Allow to cool for a few minutes before serving.
