  • 1 pound Ground Beef or ground turkey
  • 3 medium Russet Potatoes chopped
  • 3 medium Carrots sliced
  • 2 stalks Celery diced
  • 1 medium Yellow Onion diced
  • 3 cloves Garlic minced
  • 14.5 ounces Diced Tomatoes with juice
  • 8 ounces Tomato Sauce
  • 1 can Kidney Beans rinsed and drained
  • 4 cups Beef Broth or chicken/vegetable broth
  • 2 tablespoons Worcestershire Sauce or gluten-free soy sauce
  • 1 teaspoon Paprika
  • 1 teaspoon Thyme dried
Optional Toppings
  • 1/4 cup Fresh Parsley chopped
  • 1/2 cup Sour Cream or Greek yogurt
  • 1 cup Shredded Cheese cheddar or blend

Method
 

Cooking Instructions
  1. Brown the beef in a skillet over medium heat for 4-5 minutes, add onion, sauté for 3 minutes, then add garlic for 30 seconds.
  2. In a slow cooker, add potatoes, carrots, celery, and kidney beans. Pour in diced tomatoes, tomato sauce, beef broth, and Worcestershire sauce. Sprinkle spices and mix gently.
  3. Top with the browned beef mixture. Cover and cook on LOW for 7-8 hours or HIGH for 3-4 hours.
  4. After cooking, remove the bay leaf, taste and adjust seasoning. Serve hot with optional toppings.
