Soup Base
  • 3 cups Sweet Potatoes Peeled and cubed
  • 2 cups Apples Cored and diced, use tart varieties
  • 1 cup Onion Diced
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil For sautéing
Seasoning
  • 2 tablespoons Curry Powder Adjust to taste
  • 4 cups Vegetable Broth Low-sodium recommended

Method
 

Prep Ingredients
  1. Peel and chop the sweet potatoes into bite-sized cubes. Core and dice the apples, and dice the onion. Mince the garlic.
Sauté Aromatics
  1. Heat olive oil in a large pot over medium heat. Sauté the diced onions for about 5 minutes until translucent. Add minced garlic and stir until fragrant.
Add Ingredients
  1. Stir in curry powder, followed by the chopped sweet potatoes and apples. Cook for another 5 minutes.
Add Broth
  1. Pour in vegetable broth and bring to a boil. Reduce to a simmer and cook for about 20 minutes, until sweet potatoes are tender.
Blend
  1. Using an immersion blender, puree the soup until smooth. Add more broth for desired consistency.
Season and Serve
  1. Taste and adjust seasoning if needed. Serve hot, garnished with optional toppings.
