Step-by-Step Instructions
  1. Rinse 1 cup of dried white beans under cold water, soak in salted cold water for 3–12 hours, then drain.
  2. Heat 1/4 cup of extra-virgin olive oil in a large pot over medium heat. Add halved garlic and onion, caramelize for 3-4 minutes.
  3. Stir in the soaked beans, fresh herbs, Parmesan rinds, and aromatic vegetables. Season with salt and pepper, cover with 2 inches of water.
  4. Bring to a vigorous boil, reduce heat, and simmer for 1–4 hours until beans are tender, adding water as needed.
  5. Remove garlic, onion, and aromatic vegetables with tongs, taste the broth and adjust seasoning.
  6. Add fresh or frozen peas and chopped asparagus. Cook for an additional 1-3 minutes until vegetables are bright green.
  7. Squeeze in juice from half a lemon, garnish with chopped herbs and grated cheese, serve with crusty bread.
