- Rinse 1 cup of dried white beans under cold water, soak in salted cold water for 3–12 hours, then drain.
- Heat 1/4 cup of extra-virgin olive oil in a large pot over medium heat. Add halved garlic and onion, caramelize for 3-4 minutes.
- Stir in the soaked beans, fresh herbs, Parmesan rinds, and aromatic vegetables. Season with salt and pepper, cover with 2 inches of water.
- Bring to a vigorous boil, reduce heat, and simmer for 1–4 hours until beans are tender, adding water as needed.
- Remove garlic, onion, and aromatic vegetables with tongs, taste the broth and adjust seasoning.
- Add fresh or frozen peas and chopped asparagus. Cook for an additional 1-3 minutes until vegetables are bright green.
- Squeeze in juice from half a lemon, garnish with chopped herbs and grated cheese, serve with crusty bread.
