  • 2 cups almond flour Substitute with gluten-free all-purpose flour if desired.
  • 1 cup dates or maple syrup Adjust the amount to taste.
For the Filling
  • 2 cups cashews Soak overnight for best results.
  • 1 cup silken tofu Can be replaced with additional cashews.
  • 1 cup vegan creme fraiche Coconut cream can be used as a substitute.
  • 1/2 cup chickpea flour Consider cornflour as an alternative.
  • 1 teaspoon ginger Adjust quantities to taste.
  • 1 teaspoon cinnamon Adjust quantities to taste.
  • 1/4 teaspoon cloves Adjust quantities to taste.
  • 1/4 teaspoon nutmeg Adjust quantities to taste.
  • 1/4 teaspoon allspice Adjust quantities to taste.
  • 1 tablespoon orange zest Optional but recommended.
For Sweetness
  • 1/2 cup dates or maple syrup You can also use agave syrup.

Method
 

Preparation
  1. In a food processor, blend the almond flour and dates (or maple syrup) until the mixture resembles a crumbly dough. Press it into the bottom of a 9-inch tart pan and refrigerate while preparing the filling.
  2. In a blender, combine soaked cashews, silken tofu, vegan crème fraîche, chickpea flour, and spices. Blend until completely smooth, about 2-3 minutes. Add orange zest if desired.
  3. Preheat your oven to 350°F (175°C). Pour the filling into the chilled crust, smoothing it evenly. Bake for approximately 60 minutes until the edges are set.
  4. Cool at room temperature for 30 minutes, then chill in the refrigerator for at least 1 hour.
  5. Garnish as desired and serve with your favorite spiced tea or coffee.
