  • 8 ounces Sliced Mushrooms any variety
For Topping
  • 1 cup Shredded Mozzarella Cheese or dairy-free alternative
  • 1/2 cup Grated Parmesan Cheese optional
For Cooking
  • 2 tablespoons Olive Oil or avocado oil/butter

Step-by-Step Instructions
  1. Prepare your ingredients: Chop the spinach and slice the mushrooms.
  2. In a large skillet, heat olive oil over medium heat. Sauté the mushrooms for 5-7 minutes, then add spinach for 2 more minutes.
  3. Layer the chicken breasts in a baking dish, pour heavy cream over, then add the sautéed vegetables.
  4. Sprinkle shredded mozzarella and grated Parmesan cheese over the top.
  5. Preheat oven to 375°F (190°C) and bake for 25-30 minutes until cheese is golden and chicken is cooked through.
  6. Allow to cool for a few minutes, garnish with fresh herbs if desired, and serve.
