Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add 1 pound of diced chicken breast, seasoned with black pepper, seasoned salt, Italian seasoning, and paprika. Cook for about 5-7 minutes until golden and thoroughly cooked. Remove and set aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sun-dried tomatoes, stirring for about 1 minute until fragrant.
  3. Pour in 1 cup of chicken broth and 2 cups of heavy cream, whisking continuously. Increase the heat slightly to bring it to a gentle boil. Add 1 cup of Parmesan cheese and stir until melted and creamy, about 2-3 minutes.
  4. Return the chicken to the skillet with 2 cups of fresh spinach and 19 ounces of cheese tortellini. Stir and cook for an additional 5-10 minutes until the spinach wilts and tortellini are tender.
  5. Ladle into bowls or plates and garnish with additional Parmesan and parsley if desired.
