- In a large pot, heat olive oil over medium heat. Add chopped carrots, celery, and onion, stirring occasionally for 5-7 minutes until soft.
- Add minced garlic, smoked paprika, cumin, and turmeric to the pot. Stir continuously for 1-2 minutes until aromatic.
- Stir in the rinsed red lentils and pour in vegetable broth. Bring to a rolling boil.
