Step-by-Step Instructions for Smoky Red Lentil Soup with Spinach
  1. In a large pot, heat olive oil over medium heat. Add chopped carrots, celery, and onion, stirring occasionally for 5-7 minutes until soft.
  2. Add minced garlic, smoked paprika, cumin, and turmeric to the pot. Stir continuously for 1-2 minutes until aromatic.
  3. Stir in the rinsed red lentils and pour in vegetable broth. Bring to a rolling boil.
  4. Reduce the heat to low and cover the pot, letting it simmer for approximately 25 minutes until lentils are tender.
  5. Pour in coconut milk and stir in fresh spinach. Cook for an additional 5 minutes until spinach wilts.
  6. Remove from heat and add salt to taste and lemon juice. Serve warm, optionally drizzle honey for sweetness.
