  • 1 medium Roma Tomato Cherry tomatoes can be an alternative.
  • 1 tbsp Lemon Juice Add a squeeze to brighten the dish.
  • 2 tbsp Parsley For garnish.

Method
 

Step-by-Step Instructions
  1. Pat the shrimp dry and season with salt, pepper, and Cajun seasoning. Let sit for 10 minutes.
  2. Boil salted water in a large pot, cook linguine according to package instructions until al dente, about 8-10 minutes.
  3. In a skillet, heat olive oil and butter over medium heat. Add shrimp and garlic, sauté until shrimp turn pink, about 2-4 minutes. Remove from skillet.
  4. In the same skillet, reduce heat and add half-and-half, whisk in cheese until melted and creamy, about 2 minutes.
  5. Add shrimp back to skillet with linguine, diced tomato, and lemon juice. Toss to combine, adding reserved pasta water as necessary.
  6. Serve the pasta garnished with parsley and additional Cajun seasoning if desired.
