- Pat the shrimp dry and season with salt, pepper, and Cajun seasoning. Let sit for 10 minutes.
- Boil salted water in a large pot, cook linguine according to package instructions until al dente, about 8-10 minutes.
- In a skillet, heat olive oil and butter over medium heat. Add shrimp and garlic, sauté until shrimp turn pink, about 2-4 minutes. Remove from skillet.
- In the same skillet, reduce heat and add half-and-half, whisk in cheese until melted and creamy, about 2 minutes.
- Add shrimp back to skillet with linguine, diced tomato, and lemon juice. Toss to combine, adding reserved pasta water as necessary.
- Serve the pasta garnished with parsley and additional Cajun seasoning if desired.
