  • 1 cup Cotija Cheese Feta can be used as an alternative.
  • 1 Juice of 1 Lime Freshly squeezed for best flavor.
  • 3 cloves Garlic Minced; jarred is a quick alternative.
  • 1 tsp Chili Powder Use chipotle for smokiness or cayenne for heat.
  • 1 tsp Smoked Paprika
  • 1 tsp Onion Powder
For Garnishing
  • 1 bunch Fresh Cilantro Optional; can skip if desired.

Step-by-Step Instructions
  1. Begin by arranging the boneless chicken breasts or thighs in the bottom of your slow cooker. Ensure they are spread out evenly for uniform cooking.
  2. Next, carefully add the corn on top of the chicken, followed by dollops of cream cheese and crumbled cotija cheese. Drizzle freshly squeezed lime juice over the layers, then sprinkle minced garlic and chili powder evenly.
  3. Cover your slow cooker with the lid, setting it to cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  4. Once the cooking time is up, carefully remove the lid and use two forks to shred the chicken directly in the pot. Stir everything together.
