Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare your baking equipment.
  2. Roll out your mini pie crusts and line each mini pie dish or muffin cup.
  3. Sauté chopped carrots and peas in a skillet over medium heat until tender, about 5-7 minutes.
  4. Combine chopped cooked turkey with sautéed vegetables in a mixing bowl, then add cream, thyme, and parsley.
  5. Allow the filling to cool for about 5 minutes to prevent the crust from becoming soggy.
  6. Spoon the cooled filling into each mini crust and cut small steam vents on top.
  7. Bake the mini pies in the preheated oven for 30 minutes, until golden brown.
