Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare your baking equipment.
- Roll out your mini pie crusts and line each mini pie dish or muffin cup.
- Sauté chopped carrots and peas in a skillet over medium heat until tender, about 5-7 minutes.
- Combine chopped cooked turkey with sautéed vegetables in a mixing bowl, then add cream, thyme, and parsley.
- Allow the filling to cool for about 5 minutes to prevent the crust from becoming soggy.
- Spoon the cooled filling into each mini crust and cut small steam vents on top.
- Bake the mini pies in the preheated oven for 30 minutes, until golden brown.
- Remove from the oven and let them rest for 5 minutes before serving.
