Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add 1 pound of shrimp and sear for about 2-3 minutes on each side until pink.
  2. In the same skillet, sauté 2 minced garlic cloves for 30 seconds. Add 3 cups of spinach and cook until wilted.
  3. Stir in ½ cup of sun-dried tomatoes and 1 cup of heavy cream, simmering for about 2 minutes.
  4. Return cooked shrimp to the skillet, and add ½ cup of freshly grated Parmesan, stirring until melted.
  5. Toss with cooked pasta, mix well, and serve immediately, garnished with extra Parmesan and red pepper flakes.
