- In a large, heavy-bottomed pan, heat 2 tablespoons of olive oil over medium heat. Add finely chopped onion, grated carrot, and diced celery. Sauté for about 5-7 minutes until soft.
- Add the mix of ground meat into the pan and increase to medium-high. Break apart with a spoon and sauté for 8-10 minutes until browned.
- Reduce heat to medium and pour in 1 cup of dry white wine. Scrape up any brown bits from the bottom and cook for 3-5 minutes until reduced.
