Step-by-Step Instructions
  1. In a large, heavy-bottomed pan, heat 2 tablespoons of olive oil over medium heat. Add finely chopped onion, grated carrot, and diced celery. Sauté for about 5-7 minutes until soft.
  2. Add the mix of ground meat into the pan and increase to medium-high. Break apart with a spoon and sauté for 8-10 minutes until browned.
  3. Reduce heat to medium and pour in 1 cup of dry white wine. Scrape up any brown bits from the bottom and cook for 3-5 minutes until reduced.
  4. Stir in 1 cup of milk or cream, and add a pinch of nutmeg, salt, and pepper. Simmer for 30-45 minutes on low, stirring occasionally.
  5. Once thickened, remove from heat and mix in 1 cup of Parmesan cheese until melted and integrated.
  6. Serve generously over wide pasta like pappardelle or fettuccine, and pair with garlic bread.
