Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the russet potatoes, then grate them finely.
  3. Squeeze out excess moisture from the grated potatoes.
  4. Combine the grated potatoes with salt, black pepper, garlic powder, onion powder, and olive oil.
  5. Grease your muffin tin with cooking spray or olive oil.
  6. Press the potato mixture into the muffin cups to form a cup shape.
  7. Bake for 25-30 minutes until golden brown.
  8. While the potato cups bake, whisk the large eggs in a bowl, adding veggies if desired.
  9. Cool the potato cups for a few minutes, then fill with the egg mixture.
  10. Sprinkle shredded cheese on top and bake again for 15-20 minutes.
  11. Let cool for a few minutes, garnish with green onions, and serve.
