  • 1 tbsp Oil Opt for cooking spray for air frying if desired.
For the First Coating
  • 1 tbsp Chilli Powder Adjust according to your spice preference.
  • 1 tbsp Garlic Paste Feel free to use fresh minced garlic if preferred.
  • 2 tbsp Corn Flour Creates the crisp coating.
  • 2 tbsp All-Purpose Flour Can be replaced with gluten-free flour.
For the Honey Chilli Sauce
  • 2 tbsp Red Chilli Paste Sriracha can be an alternative.
  • 2 tbsp Honey Use maple syrup for a vegan option.
  • 1 tbsp Vinegar Apple cider vinegar is a great substitute.
  • 2 tbsp Soy Sauce Tamari is excellent for gluten-free.
  • 1 tbsp Tomato Ketchup Homemade spicy sauce can be used.
  • 1 tsp Black Pepper Adds a mild spicy kick.
For the Garnish
  • 1 tbsp White Sesame Seeds Adds crunch and nutty flavor.
  • 2 tbsp Spring Onion Gives a delightful onion flavor.

Method
 

Step-by-Step Instructions
  1. Wash and peel the waxy potatoes, then cut them into uniform fingers (1/3-1/2 inch thick and 2-3 inches long).
  2. In a bowl, mix together corn flour, all-purpose flour, chilli powder, garlic paste, and a pinch of salt.
  3. Preheat the air fryer to 180°C (about 350°F) and arrange the coated potato fingers inside. Air fry for approximately 4 minutes.
  4. Remove the half-cooked potatoes and place them on a wire rack to cool for a few minutes.
  5. Prepare a batter by mixing all-purpose flour, corn flour, and black pepper in a bowl, then dip each potato finger into it.
  6. Raise the air fryer temperature to 200°C (about 400°F) and fry the battered potatoes for 6-8 minutes until golden brown.
  7. For the sauce, heat a little oil and sauté minced garlic, then add chilli flakes, sesame seeds, vinegar, soy sauce, ketchup, honey, and corn flour slurry.
  8. Toss the crispy potatoes in the honey chilli sauce and garnish with chopped spring onions before serving.
