- Preheat your oven to 400°F (200°C). Wash and poke holes in the Russet potatoes. Bake for 1 hour until tender.
- Once cooled, slice each baked potato in half lengthwise and scoop out some of the flesh.
- Switch the oven to broil. Brush the skins with melted butter or olive oil, season with salt and pepper, then broil for 7-8 minutes until crispy.
- Fill each skin with sour cream and shredded cheese, then broil again for 3-4 minutes until the cheese is melted.
- Sprinkle with crumbled bacon and green onions. Serve warm and enjoy!
