- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine shredded chicken, cheddar cheese, pepper jack cheese, cumin, chili powder, garlic powder, onion powder, salt, pepper, and chopped cilantro.
- Warm your tortillas in the microwave between two damp paper towels for about 20-30 seconds.
- Lay a warm tortilla flat, add 2-3 tablespoons of the chicken filling along one edge, and roll tightly.
- Continue filling and rolling until the filling mixture is used up or all tortillas are filled.
- Lightly spray or brush the tops of the rolled taquitos with olive oil.
- Place the baking sheet in the oven and bake for 15-20 minutes until golden brown and crispy.
