Step-by-Step Instructions for Crispy Rice Omelette
  1. Crack 2-3 eggs into a bowl, adding a pinch of salt and pepper. Whisk until frothy.
  2. In a non-stick skillet, heat a splash of chilli oil over medium heat for about 30 seconds.
  3. Add cooked rice to the skillet, mix with chilli oil, and press down to form a compact base. Cook until golden brown for 2-3 minutes.
  4. Pour whisked eggs over the rice, sprinkle cheese and scallions on top, cover, and cook until eggs are set and cheese is melted (about 2-3 minutes).
  5. Once cooked, fold the omelette in half and let it rest for a minute before serving.
