Step-by-Step Instructions
  1. Begin by placing your trimmed, boneless chicken thighs at the bottom of the slow cooker.
  2. In a medium bowl, whisk together the light brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic.
  3. Pour the sauce mixture evenly over the chicken thighs in the slow cooker.
  4. Cover the slow cooker and set it to HIGH for 4 hours or LOW for 6 hours.
  5. Once cooked, carefully remove the chicken from the slow cooker and shred it using two forks.
  6. Mix cornstarch and water to form a slurry, and add it to the sauce in the slow cooker.
