  • 1 can Diced Tomatoes (with green chilis) Substitute with homemade stewed tomatoes if available

  • 1 cup Shredded Cheddar Cheese Can substitute with a blend of your favorite cheeses

Method
 

Step-by-Step Instructions
  1. Chop one onion into small pieces and mince three cloves of garlic. Set aside for layering later.
  2. In a skillet, cook one pound of ground sausage or ground pork until browned, about 8-10 minutes. Drain excess fat and transfer to the crock pot.
  3. Layer chopped potatoes, seasoned onions and garlic, cooked sausage, drained red kidney beans, and diced tomatoes in the crock pot.
  4. Pour one cup of water over the layered ingredients. Season with salt and pepper to taste.
  5. Cover and cook on low for 7-8 hours.
  6. In the last 15 minutes, sprinkle one cup of shredded cheddar cheese over the top and cover again until melted.
